Easy Greek Frittata
This Greek Frittata is an easy option for a savory breakfast dish, or an easy weeknight dinner. It features feta cheese, zucchini, tomatoes, and a mixture of spices that make this dish fantastic through the last bite!
Greek Frittata Ingredients:
3 Roma tomatoes, diced
1 zucchini, diced
1 tablespoon vegetable oil
2 cloves garlic, minced
1 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. ground black pepper
6 large eggs
1/2 cup shredded Mozzarella cheese
1/2 cup crumbled Feta cheese
2 leaves basil, thinly sliced
Greek Frittata Directions:
- Preheat oven to 375F. In a large cast iron skillet over medium heat, heat vegetable oil and add in zucchini, minced garlic, and dried herbs.
- Saute for 2-3 minutes and add in diced tomatoes. Cook for an additional 4-5 minutes.
- In a small bowl, beat eggs until smooth and pour into skillet. Let cook for 1-2 minutes and add the cheese.
- Top with sliced basil leaves and bake for 10-12 minutes, or until center of eggs is set. Top with additional fresh herbs if desired.
